- 1 lb chicken thighs, boneless and skinless
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup scallions, chopped
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, sauté until translucent.
- Season chicken thighs with paprika, salt, and pepper, then add to the pot.
- Brown the chicken on both sides for about 5 minutes.
- Add rice and stir to coat with the oil and juices.
- Pour in chicken broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked.
- Stir in chopped scallions before serving.
Notes
- For extra flavor, marinate the chicken in spices for a few hours before cooking.
