Description

Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup scallions, chopped
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Season chicken thighs with paprika, salt, and pepper, then add to the pot.
  4. Brown the chicken on both sides for about 5 minutes.
  5. Add rice and stir to coat with the oil and juices.
  6. Pour in chicken broth and bring to a boil.
  7. Reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked.
  8. Stir in chopped scallions before serving.
