Description

One Pan Balsamic Chicken is a quick and easy dinner recipe that combines tender chicken with a tangy balsamic glaze, roasted vegetables, and fresh herbs, all cooked in one pan for minimal cleanup.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup balsamic vinegar
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups mixed vegetables (such as bell peppers, zucchini, and cherry tomatoes)
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, whisk together balsamic vinegar, honey, olive oil, garlic, oregano, salt, and pepper.
  3. Place the chicken breasts in a large baking dish and pour the balsamic mixture over them.
  4. Add the mixed vegetables around the chicken in the baking dish.
  5. Bake for 25-30 minutes or until the chicken is cooked through and the vegetables are tender.
  6. Garnish with fresh basil before serving.

Notes

  • For extra flavor, marinate the chicken in the balsamic mixture for a few hours before cooking.
  • Feel free to use any vegetables you have on hand.
  • This dish pairs well with rice or quinoa.
