Description

A delicious recipe for mustard roasted chicken that results in a crispy and juicy delight.


Ingredients

  • 1 whole chicken (about 45 lbs)
  • 1/4 cup Dijon mustard
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, mix together the Dijon mustard, olive oil, honey, minced garlic, rosemary, thyme, salt, and pepper.
  3. Rub the mustard mixture all over the chicken, making sure to get under the skin for maximum flavor.
  4. Place the chicken in a roasting pan and let it marinate for at least 30 minutes.
  5. Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  6. Let the chicken rest for 10 minutes before carving and serving.

Notes

  • For extra crispy skin, you can broil the chicken for the last 5 minutes of cooking.

  • This recipe can be made with chicken thighs or breasts if preferred.
