A delicious and easy-to-make sweet potato casserole prepared in an Instant Pot, perfect for any occasion.

- 4 medium sweet potatoes, peeled and cubed
- 1/2 cup brown sugar
- 1/4 cup butter, melted
- 1/2 cup milk
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup mini marshmallows (optional)
Instructions
- Place the cubed sweet potatoes in the Instant Pot and add 1 cup of water.
- Seal the lid and cook on high pressure for 10 minutes.
- Quick release the pressure and drain the water.
- In a large bowl, mash the sweet potatoes until smooth.
- Add brown sugar, melted butter, milk, eggs, vanilla extract, cinnamon, and nutmeg to the mashed sweet potatoes and mix well.
- Transfer the mixture back to the Instant Pot.
- If desired, top with mini marshmallows.
- Set the Instant Pot to the ‘Bake’ function and cook for an additional 15 minutes.
- Let it cool slightly before serving.
Notes
- For a healthier version, reduce the amount of brown sugar.
- Can be made ahead of time and reheated before serving.
- Feel free to add chopped pecans or walnuts for extra crunch.
