Description

A delicious and easy-to-make sweet potato casserole prepared in an Instant Pot, perfect for any occasion.


Ingredients

  • 4 medium sweet potatoes, peeled and cubed
  • 1/2 cup brown sugar
  • 1/4 cup butter, melted
  • 1/2 cup milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup mini marshmallows (optional)

Instructions

  1. Place the cubed sweet potatoes in the Instant Pot and add 1 cup of water.
  2. Seal the lid and cook on high pressure for 10 minutes.
  3. Quick release the pressure and drain the water.
  4. In a large bowl, mash the sweet potatoes until smooth.
  5. Add brown sugar, melted butter, milk, eggs, vanilla extract, cinnamon, and nutmeg to the mashed sweet potatoes and mix well.
  6. Transfer the mixture back to the Instant Pot.
  7. If desired, top with mini marshmallows.
  8. Set the Instant Pot to the ‘Bake’ function and cook for an additional 15 minutes.
  9. Let it cool slightly before serving.

Notes

  • For a healthier version, reduce the amount of brown sugar.
  • Can be made ahead of time and reheated before serving.
  • Feel free to add chopped pecans or walnuts for extra crunch.
