A delicious and easy recipe for beef and broccoli made in a crockpot, perfect for a weeknight dinner.

- 2 pounds beef flank steak, sliced thinly
- 4 cups broccoli florets
- 1 cup beef broth
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons minced garlic
- 1 tablespoon minced ginger
- 2 tablespoons cornstarch
- 2 tablespoons water
Instructions
- In a crockpot, combine beef, broccoli, beef broth, soy sauce, brown sugar, garlic, and ginger.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- In a small bowl, mix cornstarch and water to create a slurry.
- 30 minutes before serving, stir in the cornstarch slurry to thicken the sauce.
- Serve hot over rice or noodles.
Notes
- For a spicier version, add red pepper flakes.
- Make sure to slice the beef against the grain for tenderness.
- Leftovers can be stored in the refrigerator for up to 3 days.
