Mini Turtle Cheesecakes are delightful bite-sized desserts featuring a creamy cheesecake filling, topped with caramel, chocolate, and pecans, perfect for any occasion.

- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1/2 cup caramel sauce
- 1/2 cup chocolate sauce
- 1/2 cup chopped pecans
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined.
- Press the mixture into the bottom of mini cheesecake pans.
- In a separate bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
- In another bowl, whip heavy cream until stiff peaks form, then fold into the cream cheese mixture.
- Pour the cheesecake filling over the crusts in the mini pans.
- Bake for 20-25 minutes or until set.
- Let cool, then refrigerate for at least 4 hours.
- Before serving, drizzle with caramel and chocolate sauce, and sprinkle with chopped pecans.
Notes
- For a gluten-free version, use gluten-free graham crackers.
- These cheesecakes can be made a day in advance.
- Store leftovers in the refrigerator for up to 3 days.
