Description

Mini Turtle Cheesecakes are delightful bite-sized desserts featuring a creamy cheesecake filling, topped with caramel, chocolate, and pecans, perfect for any occasion.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/2 cup caramel sauce
  • 1/2 cup chocolate sauce
  • 1/2 cup chopped pecans

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined.
  3. Press the mixture into the bottom of mini cheesecake pans.
  4. In a separate bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  5. In another bowl, whip heavy cream until stiff peaks form, then fold into the cream cheese mixture.
  6. Pour the cheesecake filling over the crusts in the mini pans.
  7. Bake for 20-25 minutes or until set.
  8. Let cool, then refrigerate for at least 4 hours.
  9. Before serving, drizzle with caramel and chocolate sauce, and sprinkle with chopped pecans.

Notes

  • For a gluten-free version, use gluten-free graham crackers.
  • These cheesecakes can be made a day in advance.
  • Store leftovers in the refrigerator for up to 3 days.
