- 1 cup pecans, chopped
- 1/2 cup brown sugar
- 1/4 cup corn syrup
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 package mini pie crusts
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the brown sugar, corn syrup, melted butter, eggs, vanilla extract, and salt.
- Stir in the chopped pecans until well combined.
- Place the mini pie crusts on a baking sheet.
- Fill each mini pie crust with the pecan mixture.
- Bake for 20-25 minutes or until the filling is set and the crust is golden brown.
- Allow to cool before serving.
Notes
- These pies can be made ahead of time and stored in an airtight container.
- For a twist, add chocolate chips to the filling.
- Serve with whipped cream for an extra treat.
