- 1/4 cup coconut flour
- 1/2 cup erythritol
- 1/2 cup unsalted butter, melted
- 1 cup pumpkin puree
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 1/2 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine almond flour, coconut flour, erythritol, melted butter, and mix well.
- Press the mixture into mini muffin tins to form the crust.
- In another bowl, whisk together pumpkin puree, eggs, vanilla extract, pumpkin pie spice, baking powder, and salt.
- Pour the pumpkin mixture into the crusts.
- Bake for 20-25 minutes or until set.
- Let cool before serving.
