Ingredients

  • 1/4 cup coconut flour
  • 1/2 cup erythritol
  • 1/2 cup unsalted butter, melted
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, coconut flour, erythritol, melted butter, and mix well.
  3. Press the mixture into mini muffin tins to form the crust.
  4. In another bowl, whisk together pumpkin puree, eggs, vanilla extract, pumpkin pie spice, baking powder, and salt.
  5. Pour the pumpkin mixture into the crusts.
  6. Bake for 20-25 minutes or until set.
