- 1 lb chicken breast
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 jar salsa
- 1 tsp cumin
- 1 tsp chili powder
- 1 bell pepper, chopped
- 1 onion, chopped
- Salt and pepper to taste
Instructions
- Place the chicken breast at the bottom of the crockpot.
- Add the black beans, corn, salsa, cumin, chili powder, bell pepper, and onion on top of the chicken.
- Season with salt and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken with two forks and mix everything together.
- Serve with tortillas, rice, or on its own.
