Marry Me Chicken Pasta is a delicious and creamy dish that combines tender chicken, pasta, and a rich sauce, making it perfect for a romantic dinner.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz fettuccine pasta
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the fettuccine pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet.
  3. Cook the chicken for about 6-7 minutes on each side, or until fully cooked. Remove from the skillet and let rest.
  4. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  5. Add the heavy cream, chicken broth, and sun-dried tomatoes to the skillet. Stir to combine and bring to a simmer.
  6. Add the spinach and cook until wilted, about 2-3 minutes.
  7. Stir in the Parmesan cheese until melted and smooth.
  8. Slice the cooked chicken and add it back to the skillet along with the cooked pasta. Toss to combine.
  9. Serve hot, garnished with fresh basil.

Notes

  • This dish can be made ahead of time and reheated.
  • Feel free to add other vegetables like mushrooms or bell peppers.
  • For a lighter version, substitute heavy cream with half-and-half or a non-dairy alternative.
