- 2 boneless, skinless chicken breasts
- 8 oz fettuccine pasta
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup sun-dried tomatoes, chopped
- 1 cup spinach
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the fettuccine pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet.
- Cook the chicken for about 6-7 minutes on each side, or until fully cooked. Remove from the skillet and let rest.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Add the heavy cream, chicken broth, and sun-dried tomatoes to the skillet. Stir to combine and bring to a simmer.
- Add the spinach and cook until wilted, about 2-3 minutes.
- Stir in the Parmesan cheese until melted and smooth.
- Slice the cooked chicken and add it back to the skillet along with the cooked pasta. Toss to combine.
- Serve hot, garnished with fresh basil.

- This dish can be made ahead of time and reheated.
- Feel free to add other vegetables like mushrooms or bell peppers.
