Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the parsnips with olive oil, maple syrup, thyme, salt, and pepper.
- Spread the parsnips in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until golden brown and tender, stirring halfway through.
- Serve warm as a side dish.
