Description

A delicious and healthy dish featuring sweet maple roasted carrots paired with protein-rich chickpeas.


Ingredients

  • 4 cups carrots, peeled and cut into sticks
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 3 tablespoons olive oil
  • 3 tablespoons maple syrup
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon ground cinnamon
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the carrots and chickpeas.
  3. In a small bowl, whisk together the olive oil, maple syrup, salt, pepper, and cinnamon.
  4. Pour the maple mixture over the carrots and chickpeas, tossing to coat evenly.
  5. Spread the mixture on a baking sheet in a single layer.
  6. Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and caramelized.
  7. Remove from the oven and garnish with fresh parsley before serving.
