Ingredients

- 4 cups carrots, peeled and cut into sticks
- 1 can (15 oz) chickpeas, drained and rinsed
- 3 tablespoons olive oil
- 3 tablespoons maple syrup
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon ground cinnamon
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the carrots and chickpeas.
- In a small bowl, whisk together the olive oil, maple syrup, salt, pepper, and cinnamon.
- Pour the maple mixture over the carrots and chickpeas, tossing to coat evenly.
- Spread the mixture on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and caramelized.
- Remove from the oven and garnish with fresh parsley before serving.
Notes
- For extra flavor, add a pinch of cayenne pepper for heat.
- Serve warm as a side dish or over a bed of greens for a salad.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
