Description

A delicious and healthy side dish featuring sweet maple roasted carrot fries served with a flavorful spiced yogurt dip.


Ingredients

  • 1 lb carrots, peeled and cut into fries
  • 2 tbsp olive oil
  • 2 tbsp maple syrup
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 cup plain yogurt
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp cayenne pepper (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the carrot fries with olive oil, maple syrup, salt, black pepper, and paprika until evenly coated.
  3. Spread the carrot fries in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 20-25 minutes, flipping halfway through, until the fries are tender and caramelized.
  5. While the fries are roasting, prepare the spiced yogurt dip by mixing the yogurt, cumin, garlic powder, and cayenne pepper in a small bowl.
  6. Once the fries are done, remove them from the oven and let them cool slightly before serving with the spiced yogurt dip.

Notes

  • For extra crispiness, make sure the carrot fries are not overcrowded on the baking sheet.
  • Feel free to adjust the spices in the yogurt dip to your taste.
