Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Add carrots and celery, cook for 5 minutes.
  4. Stir in zucchini and bell pepper, cook for another 5 minutes.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat and simmer for 20 minutes until vegetables are tender.
  7. Blend the soup until smooth using an immersion blender or regular blender.
  8. Stir in heavy cream and season with salt and pepper.
  9. Heat through and serve hot, garnished with fresh herbs if desired.

Notes

  • For a vegan version, substitute heavy cream with coconut cream or cashew cream.
