Description

A delicious and healthy low-carb chicken casserole that is perfect for a quick weeknight dinner.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, broccoli, cauliflower, and half of the cheddar cheese.
  3. In another bowl, mix the cream cheese, chicken broth, garlic powder, onion powder, salt, and pepper until smooth.
  4. Pour the cream cheese mixture over the chicken and vegetables, and stir to combine.
  5. Transfer the mixture to a greased baking dish and top with the remaining cheddar cheese.
  6. Bake for 25-30 minutes, or until the cheese is bubbly and golden.
  7. Let it cool for a few minutes before serving.

Notes

  • Feel free to add other low-carb vegetables like zucchini or bell peppers.
  • This casserole can be made ahead of time and stored in the refrigerator for up to 3 days.
