- 4 large russet potatoes
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes

- 1 avocado, diced
- 1/2 cup sour cream or Greek yogurt
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork, then rub with olive oil and sprinkle with salt.
- Bake the potatoes for 45-60 minutes, or until tender.
- While the potatoes are baking, prepare the toppings: mix black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper in a bowl.
