Description

Lemon Poppy Seed Muffins are a delightful treat that combines the zesty flavor of lemon with the crunch of poppy seeds, perfect for breakfast or a snack.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup granulated sugar
  • 2 tablespoons poppy seeds
  • 1 large egg
  • ½ cup buttermilk
  • ¼ cup vegetable oil
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, mix the sugar and poppy seeds.
  4. Add the egg, buttermilk, vegetable oil, lemon zest, and lemon juice to the sugar mixture and stir until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fill the muffin cups about 2/3 full with the batter.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For a sweeter muffin, add a glaze made of powdered sugar and lemon juice on top.
  • Store in an airtight container for up to 3 days.
  • These muffins can be frozen for up to 3 months.
