Delicious and festive Keto Candy Corn Popsicles perfect for fall celebrations.
Ingredients

- 1 cup unsweetened almond milk
- 1/2 cup heavy cream
- 1/4 cup erythritol or preferred keto sweetener
- 1 teaspoon vanilla extract
- Yellow food coloring
- Orange food coloring
- 1/4 cup sugar-free whipped cream (optional, for topping)
Instructions
- In a mixing bowl, combine almond milk, heavy cream, erythritol, and vanilla extract.
- Divide the mixture into three separate bowls.
- Add yellow food coloring to one bowl until desired color is achieved.
- Add orange food coloring to the second bowl until desired color is achieved.
- Leave the third bowl white.
- Pour the yellow mixture into popsicle molds and freeze for 1-2 hours.
- Once the yellow layer is set, pour the orange mixture on top and freeze for another 1-2 hours.
- Finally, pour the white mixture on top and freeze until solid.
- To serve, run the molds under warm water for a few seconds to release the popsicles.
Notes
- Adjust the sweetness according to your taste preference.
- For a creamier texture, blend the mixture before pouring into molds.
- Store any leftovers in the freezer for up to a month.
