Delicious and festive Keto Candy Corn Popsicles perfect for fall celebrations.


Ingredients

Scale
  • 1 cup unsweetened almond milk
  • 1/2 cup heavy cream
  • 1/4 cup erythritol or preferred keto sweetener
  • 1 teaspoon vanilla extract
  • Yellow food coloring
  • Orange food coloring
  • 1/4 cup sugar-free whipped cream (optional, for topping)

Instructions

  1. In a mixing bowl, combine almond milk, heavy cream, erythritol, and vanilla extract.
  2. Divide the mixture into three separate bowls.
  3. Add yellow food coloring to one bowl until desired color is achieved.
  4. Add orange food coloring to the second bowl until desired color is achieved.
  5. Leave the third bowl white.
  6. Pour the yellow mixture into popsicle molds and freeze for 1-2 hours.
  7. Once the yellow layer is set, pour the orange mixture on top and freeze for another 1-2 hours.
  8. Finally, pour the white mixture on top and freeze until solid.
  9. To serve, run the molds under warm water for a few seconds to release the popsicles.

  • Adjust the sweetness according to your taste preference.
  • For a creamier texture, blend the mixture before pouring into molds.
  • Store any leftovers in the freezer for up to a month.
