Description

A delicious and easy recipe for juicy chicken thighs marinated in a vibrant chimichurri sauce.


Ingredients

  • 4 chicken thighs
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix together parsley, olive oil, red wine vinegar, garlic, red pepper flakes, salt, and pepper to create the chimichurri sauce.
  2. Place the chicken thighs in a resealable bag and pour half of the chimichurri sauce over them. Seal the bag and marinate in the refrigerator for at least 30 minutes.
  3. Preheat the grill or oven to medium-high heat.
  4. Remove the chicken from the marinade and discard the marinade.
  5. Grill or bake the chicken thighs for 6-7 minutes on each side, or until fully cooked and juices run clear.
  6. Serve the chicken thighs with the remaining chimichurri sauce drizzled on top.

  • For extra flavor, marinate the chicken thighs overnight.
