A delicious and easy recipe for juicy chicken thighs marinated in a vibrant chimichurri sauce.

- 4 chicken thighs
- 1/2 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 3 cloves garlic, minced
- 1 teaspoon red pepper flakes
- Salt and pepper to taste
Instructions
- In a bowl, mix together parsley, olive oil, red wine vinegar, garlic, red pepper flakes, salt, and pepper to create the chimichurri sauce.
- Place the chicken thighs in a resealable bag and pour half of the chimichurri sauce over them. Seal the bag and marinate in the refrigerator for at least 30 minutes.
- Preheat the grill or oven to medium-high heat.
- Remove the chicken from the marinade and discard the marinade.
- Grill or bake the chicken thighs for 6-7 minutes on each side, or until fully cooked and juices run clear.
- Serve the chicken thighs with the remaining chimichurri sauce drizzled on top.
Notes
- For extra flavor, marinate the chicken thighs overnight.
- Serve with grilled vegetables or a fresh salad for a complete meal.
- Chimichurri sauce can be stored in the refrigerator for up to a week.
