Description

A delicious and easy recipe for juicy chicken thighs marinated in a vibrant chimichurri sauce, perfect for any meal.


Ingredients

  • 4 chicken thighs
  • 1 cup fresh parsley, chopped
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix together parsley, olive oil, red wine vinegar, garlic, red pepper flakes, salt, and pepper to create the chimichurri sauce.
  2. Place chicken thighs in a resealable bag and pour half of the chimichurri sauce over them. Seal the bag and marinate in the refrigerator for at least 1 hour.
  3. Preheat the grill to medium-high heat.
  4. Remove chicken from the marinade and discard the used marinade.
  5. Grill the chicken thighs for about 6-7 minutes on each side or until fully cooked and juices run clear.
  6. Serve the chicken thighs with the remaining chimichurri sauce drizzled on top.

Notes

  • For best flavor, marinate the chicken thighs overnight.
  • Chimichurri sauce can be made ahead of time and stored in the refrigerator for up to a week.
  • This recipe can also be made with chicken breasts if preferred.
