A delicious and easy recipe for juicy chicken thighs marinated in a vibrant chimichurri sauce, perfect for any meal.

- 4 chicken thighs
- 1 cup fresh parsley, chopped
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 4 cloves garlic, minced
- 1 teaspoon red pepper flakes
- Salt and pepper to taste
Instructions
- In a bowl, mix together parsley, olive oil, red wine vinegar, garlic, red pepper flakes, salt, and pepper to create the chimichurri sauce.
- Place chicken thighs in a resealable bag and pour half of the chimichurri sauce over them. Seal the bag and marinate in the refrigerator for at least 1 hour.
- Preheat the grill to medium-high heat.
- Remove chicken from the marinade and discard the used marinade.
- Grill the chicken thighs for about 6-7 minutes on each side or until fully cooked and juices run clear.
- Serve the chicken thighs with the remaining chimichurri sauce drizzled on top.
Notes
- For best flavor, marinate the chicken thighs overnight.
- Chimichurri sauce can be made ahead of time and stored in the refrigerator for up to a week.
- This recipe can also be made with chicken breasts if preferred.
