Description

A fun and festive dish for Halloween, these Jack-o’-Lantern stuffed peppers are not only gluten-free but also delicious and healthy.


Ingredients

  • 4 orange bell peppers
  • 1 cup cooked quinoa
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the orange bell peppers and remove the seeds.
  3. Using a knife, carve jack-o’-lantern faces into the peppers.
  4. In a large bowl, mix together the cooked quinoa, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
  5. Stuff the mixture into the carved peppers.
  6. If desired, sprinkle shredded cheese on top of the stuffed peppers.
  7. Place the stuffed peppers in a baking dish and cover with foil.
  8. Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender.
  9. Serve warm and enjoy your Halloween treat!

Notes

  • Feel free to customize the filling with your favorite ingredients.
  • These can be made ahead of time and reheated before serving.
  • For a spicier kick, add jalapeños or hot sauce to the filling.
