A fun and festive dish for Halloween, these Jack-o’-Lantern stuffed peppers are not only gluten-free but also delicious and healthy.

- 4 orange bell peppers
- 1 cup cooked quinoa
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the orange bell peppers and remove the seeds.
- Using a knife, carve jack-o’-lantern faces into the peppers.
- In a large bowl, mix together the cooked quinoa, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
- Stuff the mixture into the carved peppers.
- If desired, sprinkle shredded cheese on top of the stuffed peppers.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender.
- Serve warm and enjoy your Halloween treat!

- Feel free to customize the filling with your favorite ingredients.
- These can be made ahead of time and reheated before serving.
- For a spicier kick, add jalapeños or hot sauce to the filling.
