Description

Jack-o’-Lantern Quesadillas are a fun and festive Halloween treat that combines delicious flavors with a spooky twist, perfect for parties or family gatherings.


Ingredients

  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn kernels
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • Cooking spray or olive oil

Instructions

  1. Preheat a skillet over medium heat.
  2. In a bowl, mix together the cheeses, black beans, corn, bell peppers, and onions.
  3. Place one tortilla in the skillet and sprinkle half of the cheese mixture on one half of the tortilla.
  4. Fold the tortilla over to cover the filling and cook until golden brown, about 2-3 minutes on each side.
  5. Remove from the skillet and use a knife to cut out jack-o’-lantern faces on the top side of the quesadilla.
  6. Repeat with the remaining tortillas and filling.
  7. Serve warm with salsa or guacamole.

Notes

  • Feel free to customize the filling with your favorite ingredients.
  • For a spicier kick, add jalapeños to the filling.
  • These quesadillas can be made ahead of time and reheated before serving.
