Jack-o’-Lantern Quesadillas are a fun and festive Halloween treat that combines delicious flavors with a spooky twist, perfect for parties or family gatherings.

- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn kernels
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- Cooking spray or olive oil
Instructions
- Preheat a skillet over medium heat.
- In a bowl, mix together the cheeses, black beans, corn, bell peppers, and onions.
- Place one tortilla in the skillet and sprinkle half of the cheese mixture on one half of the tortilla.
- Fold the tortilla over to cover the filling and cook until golden brown, about 2-3 minutes on each side.
- Remove from the skillet and use a knife to cut out jack-o’-lantern faces on the top side of the quesadilla.
- Repeat with the remaining tortillas and filling.
- Serve warm with salsa or guacamole.
Notes
- Feel free to customize the filling with your favorite ingredients.
- For a spicier kick, add jalapeños to the filling.
- These quesadillas can be made ahead of time and reheated before serving.
