Description

A delightful and festive cake designed to resemble a Jack-o’-Lantern, perfect for Halloween celebrations.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 cup pumpkin puree
  • ½ cup vegetable oil
  • 4 large eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • 1 cup cream cheese frosting
  • Orange and green food coloring

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, combine the pumpkin puree, vegetable oil, and eggs.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Pour the batter into a greased cake pan and bake for 30-35 minutes.
  6. Allow the cake to cool completely before frosting.
  7. Color the cream cheese frosting with orange food coloring and frost the top and sides of the cake.
  8. Use green food coloring to create leaves and vines on top of the cake.
  9. Decorate the cake with chocolate or black icing to create a Jack-o’-Lantern face.

Notes

  • Ensure the cake is completely cool before frosting to prevent melting.
  • For a more intense pumpkin flavor, add more pumpkin puree.
  • This cake can be made a day in advance and stored in the refrigerator.
