- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 cup pumpkin puree
- ½ cup vegetable oil
- 4 large eggs
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp salt
- 1 cup cream cheese frosting
- Orange and green food coloring
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, combine the pumpkin puree, vegetable oil, and eggs.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Pour the batter into a greased cake pan and bake for 30-35 minutes.
- Allow the cake to cool completely before frosting.
- Color the cream cheese frosting with orange food coloring and frost the top and sides of the cake.
- Use green food coloring to create leaves and vines on top of the cake.
- Decorate the cake with chocolate or black icing to create a Jack-o’-Lantern face.
Notes
- Ensure the cake is completely cool before frosting to prevent melting.
- For a more intense pumpkin flavor, add more pumpkin puree.
- This cake can be made a day in advance and stored in the refrigerator.
