- 1 cup pastina
- 4 cups chicken or vegetable broth
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup spinach, chopped
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- In a large pot, heat a little oil over medium heat and sautรฉ the onion, garlic, carrots, and celery until softened.
- Add the broth and bring to a boil.
- Stir in the pastina and cook according to package instructions until al dente.
- Add the chopped spinach and cook for an additional 2 minutes.
- Season with salt and pepper to taste.
- Serve hot, topped with grated Parmesan cheese.
Notes
- Feel free to add other vegetables like peas or zucchini.

- For a vegan version, use vegetable broth and omit the cheese.
