Description

Italian Pastina Soup is a comforting and heartwarming dish made with tiny pasta and flavorful broth, perfect for any time of the year.


Ingredients

  • 1 cup pastina
  • 4 cups chicken or vegetable broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup spinach, chopped
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. In a large pot, heat a little oil over medium heat and sautรฉ the onion, garlic, carrots, and celery until softened.

  3. Stir in the pastina and cook according to package instructions until al dente.
  4. Add the chopped spinach and cook for an additional 2 minutes.
