- 2 pounds of potatoes, peeled and grated
- 1 medium onion, finely chopped
- 2 large eggs
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup butter, melted
- Vegetable oil for frying
Instructions
- Grate the potatoes and place them in a clean kitchen towel to squeeze out excess moisture.
- In a large bowl, combine the grated potatoes, chopped onion, eggs, flour, salt, and pepper.
- Heat a skillet over medium heat and add a mixture of butter and vegetable oil.
- Scoop a portion of the potato mixture into the skillet and flatten it to form a pancake.
- Fry until golden brown on both sides, about 4-5 minutes per side.
- Remove from the skillet and drain on paper towels.
- Serve hot with applesauce or sour cream.
Notes
- For extra crispiness, make sure to remove as much moisture from the potatoes as possible.
- These pancakes can be kept warm in the oven while you fry the remaining batches.
