- 4 cups fresh corn kernels (about 6 ears of corn)
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 cup crumbled cotija cheese
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Grill the corn on medium-high heat until charred, about 10 minutes. Let it cool.
- In a large bowl, combine mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
- Add the cooled corn kernels to the bowl and mix well.
- Fold in the crumbled cotija cheese and chopped cilantro.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
