Description

A vibrant and flavorful Mexican street corn salad that combines sweet corn, creamy dressing, and zesty spices for a refreshing side dish.


Ingredients

  • 4 cups fresh corn kernels (about 6 ears of corn)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup crumbled cotija cheese
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Grill the corn on medium-high heat until charred, about 10 minutes. Let it cool.
