Description

Ingredients

  • 4 medium zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup breadcrumbs
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat and sauté onions and garlic until translucent.
  3. Add sliced zucchinis, cherry tomatoes, and corn to the skillet. Cook for about 5-7 minutes until slightly softened.
  4. Stir in Italian seasoning, salt, and pepper.
