- 4 large eggs
- 1 cup fresh spinach, chopped
- 2 medium potatoes, peeled and diced
- 1/2 cup onion, chopped
- 1/2 cup cheese (cheddar or feta), crumbled
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté onions until translucent.
- Add diced potatoes and cook until tender, about 10 minutes.
- Stir in the chopped spinach and cook until wilted.
- In a bowl, whisk together the eggs, salt, and pepper.
- Pour the egg mixture over the vegetables in the skillet.
- Sprinkle cheese on top and cook for a few minutes until the edges start to set.
- Transfer the skillet to the oven and bake for 15-20 minutes, or until the frittata is fully set.
- Let it cool slightly before slicing and serving.
