- 1 can (15 oz) pumpkin puree
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 cup pecans, chopped
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1 cup milk
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the pumpkin puree, brown sugar, granulated sugar, and melted butter.
- In another bowl, combine the flour, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the pumpkin mixture, alternating with the milk, and mix until smooth.
- Fold in the chopped pecans.
- Pour the batter into a greased baking dish.
- Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool slightly before serving.
Notes
- Serve warm with whipped cream or vanilla ice cream.
- Can be stored in the refrigerator for up to 3 days.
- For added flavor, consider adding chocolate chips or dried cranberries.
