- 6 medium potatoes, diced
- 1 onion, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Place the diced potatoes and chopped onion in the crock pot.
- Add the chicken broth and season with salt and pepper.
- Cook on low for 6-8 hours or high for 3-4 hours until the potatoes are tender.
- Once cooked, mash some of the potatoes for a creamy texture.
- Stir in the heavy cream and shredded cheddar cheese until melted and combined.
- Top with crumbled bacon and green onions before serving.
Notes
- For a vegetarian version, substitute chicken broth with vegetable broth.
- Adjust the thickness of the soup by adding more or less cream.
- Can be stored in the refrigerator for up to 3 days.
