A delicious and hearty crock pot chuck roast recipe perfect for cozy dinners.
Ingredients

- 3–4 lbs chuck roast
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- Season the chuck roast with salt and pepper.
- In a skillet, sear the roast on all sides until browned.
- Place the chopped onion, garlic, carrots, and potatoes in the crock pot.
- Put the seared roast on top of the vegetables.
- In a bowl, mix the beef broth, Worcestershire sauce, thyme, and rosemary, then pour over the roast.
- Cover and cook on low for 8 hours or high for 4 hours.
- Once done, shred the meat and serve with the vegetables.
Notes
- For extra flavor, add a splash of red wine to the broth.
- Leftovers can be stored in the refrigerator for up to 3 days.
- This dish pairs well with crusty bread.
