Description

A delicious and hearty crock pot chuck roast recipe perfect for cozy dinners.


Ingredients

Scale
  • 34 lbs chuck roast
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. Season the chuck roast with salt and pepper.
  2. In a skillet, sear the roast on all sides until browned.
  3. Place the chopped onion, garlic, carrots, and potatoes in the crock pot.
  4. Put the seared roast on top of the vegetables.
  5. In a bowl, mix the beef broth, Worcestershire sauce, thyme, and rosemary, then pour over the roast.
  6. Cover and cook on low for 8 hours or high for 4 hours.
  7. Once done, shred the meat and serve with the vegetables.

Notes

  • For extra flavor, add a splash of red wine to the broth.
  • Leftovers can be stored in the refrigerator for up to 3 days.
  • This dish pairs well with crusty bread.
