Ingredients

- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup heavy cream
- 2 cups spinach
- 1/2 cup chopped fresh basil
Instructions
- In a bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix well and form into small meatballs.
- In a large pot, bring chicken broth to a boil. Add diced tomatoes and meatballs, and simmer for 20 minutes.
- Stir in heavy cream, spinach, and basil. Cook for an additional 5 minutes until spinach is wilted.
- Serve hot and enjoy your creamy Italian meatball soup!
Notes
- For a spicier version, add red pepper flakes.
- Can substitute ground turkey for a lighter option.
