- 4 large potatoes, peeled and diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese

- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 2 tablespoons butter
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, sauté until translucent.
- Add the diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
- Stir in the heavy cream, shredded cheddar cheese, salt, pepper, and paprika. Cook until the cheese is melted and the soup is heated through.
- Serve hot, garnished with additional cheese or fresh herbs if desired.
Notes
- For a lighter version, substitute heavy cream with milk or a non-dairy alternative.
- Feel free to add cooked bacon or green onions for extra flavor.
