- 1 lb chicken breast, diced
- 1 cup cornstarch
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- 1 cup mayonnaise
- 1/4 cup sweet chili sauce
- 2 tbsp sriracha
- 4 cups mixed greens
- 1 cup shredded carrots
- 1 cup sliced cucumbers
- 1/4 cup chopped green onions
Instructions
- Preheat the oven to 400°F (200°C).
- Coat the diced chicken in cornstarch, then dip in beaten eggs, and finally coat with panko breadcrumbs.
- Place the coated chicken on a baking sheet and bake for 20-25 minutes until golden and crispy.
- In a bowl, mix mayonnaise, sweet chili sauce, and sriracha to create the Bang Bang sauce.
- In serving bowls, layer mixed greens, shredded carrots, and sliced cucumbers.
- Add the baked chicken on top and drizzle with the Bang Bang sauce.
- Garnish with chopped green onions and serve immediately.
Notes
- Adjust the spiciness of the sauce by adding more or less sriracha.
- For a healthier option, you can grill the chicken instead of baking.
- This dish can be served warm or cold.
