Description

Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 4 cups beef broth
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • Chopped cilantro for garnish

Instructions

  1. Set the Instant Pot to sauté mode and brown the ground beef with onions, bell pepper, and garlic.
  2. Add the black beans, corn, diced tomatoes, taco seasoning, and beef broth to the pot.
  3. Close the lid and set the Instant Pot to high pressure for 10 minutes.
  4. Once cooking is complete, perform a quick release of the pressure.
  5. Stir in the shredded cheese and sour cream until melted and combined.
  6. Serve hot, garnished with chopped cilantro.
