- 1 lb ground beef
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 1 packet taco seasoning
- 4 cups beef broth
- 1 cup shredded cheese
- 1/2 cup sour cream
- Chopped cilantro for garnish
Instructions
- Set the Instant Pot to sauté mode and brown the ground beef with onions, bell pepper, and garlic.
- Add the black beans, corn, diced tomatoes, taco seasoning, and beef broth to the pot.
- Close the lid and set the Instant Pot to high pressure for 10 minutes.
- Once cooking is complete, perform a quick release of the pressure.
- Stir in the shredded cheese and sour cream until melted and combined.
- Serve hot, garnished with chopped cilantro.
Notes
- For a spicier soup, add jalapeños or hot sauce.
- This soup can be made ahead and stored in the refrigerator for up to 3 days.
