Description

A quick and easy recipe for making flavorful collard greens with smoked turkey using an Instant Pot.


Ingredients

  • 2 lbs collard greens, cleaned and chopped
  • 1 lb smoked turkey leg or wings
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Set the Instant Pot to sauté mode and add olive oil.
  2. Add chopped onion and garlic, and sauté until softened.
  3. Add the smoked turkey and cook for a few minutes.
  4. Pour in the chicken broth and add the collard greens.
  5. Season with red pepper flakes, salt, and pepper.
  6. Close the lid and set the Instant Pot to manual high pressure for 30 minutes.
  7. Once cooking is complete, allow for a natural release of pressure for 10 minutes, then quick release any remaining pressure.
  8. Remove the turkey, shred the meat, and return it to the pot. Stir well and serve.

Notes

  • For a vegetarian version, omit the smoked turkey and use vegetable broth.
  • Adjust the seasoning according to your taste preferences.
  • Leftovers can be stored in the refrigerator for up to 3 days.
