Description

A creamy and spicy potato soup made in the Instant Pot, perfect for a comforting meal.


Ingredients

  • 2 lbs potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/2 cup green onions, chopped (for garnish)

Instructions

  1. Set the Instant Pot to sauté mode and heat the olive oil.
  2. Add the chopped onion and garlic, sauté until translucent.
  3. Add the diced potatoes, Cajun seasoning, salt, and pepper, stirring to combine.
  4. Pour in the broth and close the lid of the Instant Pot.
  5. Set to manual high pressure for 10 minutes.
  6. Once done, perform a quick release of the pressure.
  7. Stir in the heavy cream and adjust seasoning if necessary.
  8. Serve hot, garnished with green onions.

Notes

  • For a vegetarian version, use vegetable broth.
  • Adjust the amount of Cajun seasoning to taste.
  • This soup can be stored in the refrigerator for up to 3 days.
