- 1 lb ground turkey or chicken
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or vegetable broth
- 2 cups spinach, chopped
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1 cup whole wheat pasta
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground turkey or chicken over medium heat.
- Add the diced onion and minced garlic, cooking until the onion is translucent.
- Stir in the crushed tomatoes, broth, and Italian seasoning. Bring to a boil.
- Add the whole wheat pasta and cook according to package instructions until al dente.
- Stir in the chopped spinach and cook until wilted.
- Serve hot, topped with ricotta and mozzarella cheese.
