Ingredients

  • 1 lb ground turkey or chicken
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 2 cups spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup whole wheat pasta
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground turkey or chicken over medium heat.
  2. Add the diced onion and minced garlic, cooking until the onion is translucent.
  3. Stir in the crushed tomatoes, broth, and Italian seasoning. Bring to a boil.
