Ingredients

  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup green beans, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup pasta (small shapes like ditalini or elbow)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; sauté until softened, about 5 minutes.
  3. Stir in garlic and zucchini; cook for another 2 minutes.
  4. Add diced tomatoes, vegetable broth, kidney beans, green beans, oregano, basil, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 10 minutes.
  6. Add pasta and cook until al dente, about 8-10 minutes.
  7. Adjust seasoning if necessary and serve hot, garnished with fresh parsley.
