Ingredients

  • 1 cup spinach, chopped
  • 1/2 cup bell peppers, diced
  • 1/2 cup onions, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup feta cheese, crumbled
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs, salt, and pepper.
  3. In an oven-safe skillet, heat olive oil over medium heat.
  4. Add onions and bell peppers, sautéing until softened.
  5. Add spinach and cherry tomatoes, cooking until spinach wilts.
  6. Pour the egg mixture over the vegetables and sprinkle with feta cheese.
  7. Cook on the stovetop for 2-3 minutes until the edges start to set.
  8. Transfer the skillet to the oven and bake for 15-20 minutes until the frittata is fully set.
  9. Let cool slightly before slicing and serving.
