Description
A delicious and healthy Korean beef dish made in a crock pot, perfect as a side dish.
Ingredients

- 2 lbs beef chuck roast
- 1 cup low-sodium soy sauce
- 1/2 cup brown sugar
- 1/4 cup rice vinegar
- 1 tablespoon sesame oil
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1/2 teaspoon black pepper
- 1 cup beef broth
- 1 cup chopped green onions
- 1 tablespoon sesame seeds
Instructions
- Place the beef chuck roast in the crock pot.
- In a bowl, mix together soy sauce, brown sugar, rice vinegar, sesame oil, garlic, ginger, and black pepper.
- Pour the sauce over the beef in the crock pot.
- Add the beef broth and stir to combine.
- Cover and cook on low for 6-8 hours or until the beef is tender.
- Once cooked, shred the beef with two forks and mix it back into the sauce.
- Garnish with chopped green onions and sesame seeds before serving.
Notes
- Serve with steamed rice or vegetables for a complete meal.
- Adjust the sweetness by adding more or less brown sugar.
- This dish can be made ahead of time and reheated.
