Description

A delicious and healthy Korean beef dish made in a crock pot, perfect as a side dish.


Ingredients

  • 2 lbs beef chuck roast
  • 1 cup low-sodium soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup rice vinegar
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1/2 teaspoon black pepper
  • 1 cup beef broth
  • 1 cup chopped green onions
  • 1 tablespoon sesame seeds

Instructions

  1. Place the beef chuck roast in the crock pot.
  2. In a bowl, mix together soy sauce, brown sugar, rice vinegar, sesame oil, garlic, ginger, and black pepper.
  3. Pour the sauce over the beef in the crock pot.
  4. Add the beef broth and stir to combine.
  5. Cover and cook on low for 6-8 hours or until the beef is tender.
  6. Once cooked, shred the beef with two forks and mix it back into the sauce.
  7. Garnish with chopped green onions and sesame seeds before serving.

Notes

  • Serve with steamed rice or vegetables for a complete meal.
  • Adjust the sweetness by adding more or less brown sugar.
  • This dish can be made ahead of time and reheated.
