Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the whole wheat flour, almond flour, coconut sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together the melted coconut oil, applesauce, egg, and vanilla extract.
- Combine the wet and dry ingredients until a dough forms.
- If desired, divide the dough and add food coloring to create different colors.
- Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
- Flatten the balls slightly and add sprinkles on top if using.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
