Ingredients

- 1 ยฝ cups whole wheat flour
- 1 tsp baking soda
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- ยฝ tsp ground nutmeg
- ยผ tsp salt
- ยผ cup coconut oil, melted
- ยผ cup honey or maple syrup
- 1 large egg
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350ยฐF (175ยฐC).
- In a bowl, mix together the whole wheat flour, baking soda, ginger, cinnamon, nutmeg, and salt.
- In another bowl, whisk together the melted coconut oil, honey (or maple syrup), egg, and vanilla extract.
- Combine the wet and dry ingredients until a dough forms.
- Roll out the dough on a floured surface and cut into desired shapes.
- Place cookies on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until edges are firm.
- Let cool before decorating if desired.
Notes
- For a vegan option, substitute the egg with a flax egg.
- Store cookies in an airtight container for up to a week.
- Feel free to add raisins or nuts for extra texture.
