Ingredients

  • 1 lb ground beef
  • 1 can diced tomatoes (14.5 oz)
  • 1 can kidney beans (15 oz)
  • 1 cup corn (frozen or canned)
  • 1 cup shredded cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat, then drain excess fat.
  2. Add the chopped onion and minced garlic to the skillet and sauté until softened.
  3. Transfer the beef mixture to the crockpot.
  4. Add diced tomatoes, kidney beans, corn, chili powder, cumin, salt, and pepper to the crockpot.
  5. Stir to combine all ingredients.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  7. Before serving, sprinkle shredded cheese on top and let it melt.
