- 1 lb Brussels sprouts, trimmed and halved
- 2 tbsp olive oil
- Salt and pepper to taste
- 4 oz goat cheese, crumbled
- 1/4 cup balsamic vinegar
- 1/4 cup walnuts, chopped (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper.
- Spread the Brussels sprouts on a baking sheet in a single layer.
- Roast in the preheated oven for 20-25 minutes, or until golden brown and tender.
- Remove from the oven and drizzle with balsamic vinegar.
- Top with crumbled goat cheese and walnuts, if using.
- Serve warm and enjoy!

- For a vegan option, substitute goat cheese with a plant-based cheese alternative.
