Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, whisk together flour, baking powder, baking soda, salt, and poppy seeds.
- In another bowl, cream the butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Mix in the buttermilk, lemon juice, and lemon zest until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let the muffins cool before glazing.
Notes
- For a stronger lemon flavor, increase the lemon zest.
- These muffins can be stored in an airtight container for up to 3 days.
- Consider adding a sprinkle of extra poppy seeds on top of the glaze for decoration.
