Delicious pumpkin pancakes inspired by the Gilmore Girls, served with a rich cinnamon butter.
Ingredients

- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup pumpkin puree
- 1/2 cup milk
- 2 large eggs
- 2 tablespoons sugar
- 2 tablespoons melted butter
Instructions
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, mix the pumpkin puree, milk, eggs, sugar, and melted butter until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- For the cinnamon butter, mix softened butter with cinnamon and sugar until smooth.
- Serve pancakes warm with cinnamon butter on top.
Notes
- For a richer flavor, use brown sugar instead of white sugar.
- These pancakes can be made ahead and reheated in the toaster.
- Top with maple syrup for extra sweetness if desired.
