Description

Delicious pumpkin pancakes inspired by the Gilmore Girls, served with a rich cinnamon butter.


Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup pumpkin puree
  • 1/2 cup milk
  • 2 large eggs
  • 2 tablespoons sugar
  • 2 tablespoons melted butter

Instructions

  1. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  2. In another bowl, mix the pumpkin puree, milk, eggs, sugar, and melted butter until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake.
  5. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. For the cinnamon butter, mix softened butter with cinnamon and sugar until smooth.
  7. Serve pancakes warm with cinnamon butter on top.

Notes

  • For a richer flavor, use brown sugar instead of white sugar.
  • These pancakes can be made ahead and reheated in the toaster.
  • Top with maple syrup for extra sweetness if desired.
