Description

Ghostly Cupcakes are spooky yet delightful treats perfect for Halloween celebrations, featuring a fluffy vanilla cupcake topped with ghostly meringue frosting.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 cup milk
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 3 egg whites
  • 1/4 tsp cream of tartar
  • 1 cup powdered sugar
  • Chocolate chips for eyes

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. In another bowl, combine the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined.
  7. Fill the cupcake liners about 2/3 full with batter.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Let the cupcakes cool completely.
  10. For the meringue frosting, beat the egg whites and cream of tartar until soft peaks form.
  11. Gradually add the powdered sugar and continue beating until stiff peaks form.
  12. Pipe the meringue onto the cooled cupcakes to create ghost shapes.
  13. Use chocolate chips to create eyes on the meringue ghosts.

  • Ensure the cupcakes are completely cool before frosting to prevent melting.
