- 4 boneless, skinless chicken breasts
- 1 lb baby potatoes, halved
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Place the chicken breasts in the bottom of the crockpot.
- Add the halved baby potatoes on top of the chicken.
- In a bowl, mix together the chicken broth, heavy cream, parmesan cheese, minced garlic, Italian seasoning, salt, and pepper.
- Pour the mixture over the chicken and potatoes in the crockpot.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and the potatoes are tender.
- Garnish with fresh parsley before serving.
Notes
- For a thicker sauce, you can add a cornstarch slurry during the last 30 minutes of cooking.
- Feel free to add vegetables like carrots or green beans for extra nutrition.
