Ingredients

  • 1 package (16 oz) gnocchi
  • 4 cloves garlic, minced
  • 2 cups spinach
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Stir in minced garlic and Italian seasoning, cooking for an additional minute.
  4. Add gnocchi to the skillet and cook according to package instructions, stirring occasionally.
  5. In the last few minutes of cooking, add spinach and cherry tomatoes, cooking until spinach is wilted.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with Parmesan cheese if desired.

Notes
