- 1 package (16 oz) gnocchi
- 4 cloves garlic, minced
- 2 cups spinach
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
- Stir in minced garlic and Italian seasoning, cooking for an additional minute.
- Add gnocchi to the skillet and cook according to package instructions, stirring occasionally.
- In the last few minutes of cooking, add spinach and cherry tomatoes, cooking until spinach is wilted.
- Season with salt and pepper to taste.
- Serve hot, topped with Parmesan cheese if desired.
Notes
- For a spicier version, add red pepper flakes.
- Feel free to substitute chicken with shrimp or tofu for a different protein.
